Chin-Chin’ Nigerian Fried Cookies


Chin-Chin is an age-long snack made by Nigerians, It is staple treat served in most family celebrations. As much as I loved eating these delicious fried cookies as a kid, I mostly enjoyed making them with my siblings and cousins as our parents taught us with stories of their childhood.

We would play with the pastries, cutting then into different shapes and sizes. In this recipe I will share with you the two classic shapes for Chin-Chin.

Here’s the recipe:

Ingredients:

  • 2 cups flour
  • 3 Tbsp. Caster Sugar
  • 1 Tsp. Baking Powder
  • 1 Tbsp. Melted butter
  • 3 Tbsp. Milk
  • 1 Large egg
  • Flavourings (Optional)
  • 1/4 Tsp. Nutmeg
  • 1/4 Tsp. Salt
  • 700g Sunflower Oil (To fry)

Instructions:

For the dough:

  1. Mix the flour, sugar, baking powder, nutmeg and salt in a bowl.
    In a separate bowl, whisk the egg, melted butter and milk.
  2. Create a well in the flour mixture and pour the whisked egg mixture into it.
  3. Using your hands, mix the content together until combined, it would look like a clumpy dough at first.
  4. Pour the clumped dough unto a lightly floured surface and knead into a smooth dough.

For the butterfly shape:

  1. Use the Palm of your hands to flatten the dough slightly, then using a rolling pin, roll the dough out to about 1.5mm to 2mm thick.
  2. Use a knife to cut off the edges, then cut out sheets to form an even rectangle.
  3. Take each rectangle and cut out strips of about 3cm to 3.5cm wide and cut a slit along the centre of each pastry strip.
  4. Loop one end of the strip through the slit and repeat with the remaining pastry strips.

For the cube shape:

  1. Use the Palm of your hands to flatten the dough slightly, then using a rolling pin, roll the dough out to about 1.5mm to 2mm thick.
  2. Use a knife to cut off the edges to form a square, then cut into strips about 3mm thick.
  3. Cut each strips by another 3mm to form cubes and repeat with the remaining pastry.

To fry:

  1. Heat the oil in a deep pan over medium-high heat until hot (180 degrees).
  2. Carefully deep fry the strips until it turns a light golden brown.
  3. Drain on a paper towel and let it cool before you serve.

Chin-Chin can be eaten as a snack on its own and can also be used to create delicious desserts.
