Hearty Pork Strips & Cherry tomato pepper soup 

I have enjoyed the last few months of living in Nigeria where the weather is beautifully hot and where I fueled my love for Nigerian Food such as pepper soup. Leaving was difficult but moving to another European country (no Nigeria is not a European country, I am now referring to the last fives years in London precedent to the last eight months in Nigeria) is an experience I have looked forward to. Here in Florence, Italy the winter weather unlike in Nigeria has me craving fiery delicacies. So I made this delicious pepper soup.

This is not the typical Nigerian style pepper soup but not to deviate from my ethnicity, I used the authentic Nigerian ‘pepper soup’ spices with the classic Italian touch.

This was an impromptu meal, which I find myself doing a lot recently by simply picking out any available ingredients and making it into a meal.

Pork Strips and Cherry Tomato Pepper Soup
  1. Fill a saucepan with water and place over medium to high heat.
  2. Throw in the grain of Selim, African nutmegs, onions and chili.
  3. Bring to boil and then add the pork strips (these are bacon, pork strips just sound posh and healthier).
  4. With a spoon, pick out the chilli and whole spices (this is optional, I like to leave it in because the longer it stays in the spicier it gets)
  5. Pour in a tin of cherry tomatoes and let it simmer for 15 minutes.
  6. Season with salt and pepper (as you desire)
  7. Serve hot.
Recipe Notes

This soup can be eaten with a variety of carbs, such as: bread and rice. You can also enjoy it on its own, its simply DELICIOUS.
