Moi-Moi Prawn Muffin (Steamed Beans Cake)
  1. Wash the skins of the beans, getting rid of the black eyes and soak for 2 hours or overnight to soften it.
  2. Prepare a loaf tin by greasing the insides with sunflower oil, then pre-heat your oven to 180C degrees.
  3. Put the beans into a food processor or blender, add the bell pepper, onions, garlic, ginger and water. Blend to a smooth batter.
  4. Pour the moi-moi batter into a bowl. Whisk in the oil, tomato puree and stock cube. Season with Chili flakes and salt.
  5. pour the moi-moi batter into the prepared loaf tin. Top it of with the prawns or any other stuffing. Aldo sprinkle some chili flakes or/and rock salt on top.
  6. Place the tin into a baking dish and pour the kettle of hot water into the baking dish (not the tin!)
  7. Carefully place it into the pre-heated oven and bake for 1 hour at 180C degrees .
  8. Remove from oven and seat for a few minutes before serving. Serve hot.
