Banana pancakes are my go to guilty pleasure without the guilt. Sometimes when I’m staying up late I crave a sweet midnight snack and most times in the morning I wake up with a grinning sweet tooth.
This is a healthy yet decadent combination that quenches my sugar cravings, a three ingredient healthy treat perfect for not just a cheat day.
Here’s the quick and easy recipe:
Banana pancakes with kiwi & coconut yogurt
Mash the banana in a small bowl, add the egg and flour, then whisk together with a fork into a batter (the batter will not smooth)
Place a lightly greased pan on medium heat until hot.
Pour a tbsp of the pancake batter unto the greased pan and let it cook for 1 minute on both sides.
Repeat this process with the remaining pancake batter.
Stack the pancakes on a plate and serve with the chopped kiwi and coconut yogurt.
