Epic One Pot Feast. Prawns, Beans & Roots.


African cuisines are of many delicious varieties. some meals have the tendency to put you in a feasting mood. That’s exactly how I felt when I made this delicious bean pottage. It consist of a variety of fresh vegetables, legumes and prawns.

There are times when I cook a delicious pot of food and I just feel like calling the whole of Africa (OK maybe just my street) to come feast with me. You know; like when Oprah would give away cars on her show… One bowl for you.. One bowl for you.. One bowl for every one!

Well, since it is nearly impossible for me to feed the whole of Africa, I thought why not share the recipe to this delicacy with the world.

One Pot beans with prawns, plantains and potatoes
Instructions
  1. Purée the tomatoes, peppers and onions in a bowl and set aside.
  2. In a pot over high heat cook the beans with 2 litres of water for 1 hour or until it is soft(half-cooked).
  3. Add the puréed mixture with the yam, sweet potatoes and plantain.
  4. Crush in the Maggi cubes and then stir with a wooden spoon as you pour in the remaining 1 litre of water and both oils.
  5. Check the taste and add desired amount or salt.
  6. Let it simmer over medium heat for 20 minutes or until most of the water has evaporated.
  7. Add the prawns and cook for a further 10 minutes.
  8. Turn the heat off and leave the pottage to rest for 15 minutes before you serve.
