As we draw closer to Christmas I find myself making hearty festive meals and yesterday for dinner I made baked beans. Yes, beans. I know it’s not the first thing you’ll think of for a festive meal but it was so delicious, an absolutely impromptu meal that I can dare say is just perfect to gather the family around and feast on.
Black eyed beans is not very common to cook with, but it is actually a staple in most Nigerian household.
Usually we cook this beans in a palm oil base tomato sauce either fried or steamed or just boiled beans served with tomato sauce but unlike the typical way I baked my beans with drumsticks and sweet cherry liqueur.
Here’s the recipe:
Buttery Baked beans & drumsticks
1 hour 5 minutes
Pre-heat oven to 180 degrees.
Over medium heat in a pan melt two slices of butter.
Brown the drumsticks in the melted butter.
Toss in the chillies, red & white onions and then tomatoes.
Stir continuously and let it sizzle for 2 minutes.
Pour the contents of the pan into a baking dish.
Pour in the cooked beans, season with salt & pepper and gently mix in to surround each drumstick with beans.
Place the remains slices of butter on top and drizzle with cherry liqueur.
Place in the pre-heated oven and bake for 30 minutes.
Bring out of the oven and stir all together and turn the drumsticks over.
Place it into the oven and bake for another 30 minutes.
Turn heat off and let it seat in the oven for 3 minutes.
Remove from oven and serve hot.
