Char-grilled Salmon Salad with Balsamic dressing

This scrumptious bed of fresh leaf salad is the perfect resting place for some delicious char-grilled salmon fillets. We all have a friend that’s staying away from meat and poultry and this will be the best way to show them you care.


Avocado and lemon are absolutely relationship goals because they go so well together.


A radish kick with aromatic spices for extra flavour. Pure joy.

Instructions
  1. Chop the avocados into a bowl with the lemon juice and set aside. Also chop the radishes and set aside.
  2. Mix the baby spinach and rocket salad. Spread unto a serving tray.
  3. Take the chopped avocados and radishes and spread them all over the salad. Set aside.
  4. Grease and season both sides of the salmon fillets with oil and salt.
  5. Heat a griddle over medium to high heat. Place the salmon skin-side down and cook for 3 minutes. Turn and cook for another 3 minutes.
  6. Place the grilled salmon unto the tray of salad.
Making the balsamic dressing
  1. Put all the ingredients into a small bowl. Whisk it altogether, roughly crushing the garlic, coriander and cumin. You can also do this in a food processor or with a pistol and mortal.
  2. Pour the Balsamic dressing over the tray of salmon salad.
  3. Serve or chill for later.
