Coconut Candy (Authentic Nigerian Recipe!!)


As a kid one of my favorite things to snack on was coconut candy. It is so delicious and keeps you wanting more. It reminds me of my primary school days. Oh the excitement when the lunch time bell rang and we got to snack on the best thing ever!

I never knew how much effort was put into making coconut candy. Until I tried it myself. Phew! It’s hard work, but it’s very fun and worth every bit of sweat.

This recipe is the effort of three generations of my family. My grandma carved and grated the coconuts, my mama caramelized it in a cast iron pot, I did most of the tasting (haha), portioning and captured the pictures, whilst the overall idea was from by my younger sister.

Instructions
  1. Carve the coconut from its shell, break into the flesh, then pour its water into a cup and set aside.
  2. Wash the coconut and grate it into a bowl.
  3. place a cast iron over medium-high heat, then pour the water, coconut water and sugar inside.
  4. Let the water and sugar mixture heat up to a boil forming a syrup.
  5. Pour in the grated coconuts stirring continuously with a wooden spoon.
  6. This is where the hard work comes... You have to stir the mixture in the crock pot until its golden brown in color and sticky, then its ready.
  7. Now spread out your coconut candy on a tray so it cools down.
  8. Share into portions or/and roll with your hands to form little balls or/and wrap in cling film.

Aside from snacking on these beauties, you can use then as toppings on cakes, smoothies, milkshake and a varieties of desserts.
