Dinner platter of sides & starters


This unconventional dinner platter features a variety of sides and platters. You don’t need an outdoor grill to enjoy a buttery corn on the cob, I made mine on a skillet over a hot stove.

You can also grill up some spicy beef strips and juice it up with a refreshing tomato mayo dip.

In addition you can feast on a bowl of avocado cream spinach, which is simply delicious and dairy free.

To bring more fresh vibes to the platter, I mixed up a quick and easy tomato salsa that is simply refreshing.

A delicious and colourful platter that is just as fun to make as it is great treat. A good meal to feast on with family, friends or even on your own.

Instructions
Avocado Cream Spinach
  1. Steam spinach in a pan with a few drops of water for 1 minute
  2. Mash the avocado in a bowl with olive oil, garlic and onion powder.
  3. Mix the avocado cream into the steamed spinach. Season with salt and pepper and set aside.
Beef Strips
  1. In a small bowl, make a spice rub by mixing some butter with garlic, ginger, paprika and chilli powder. Also season with salt and pepper.
  2. Using your fingers, rub the spice rum into the piece of steak and place on a hot skillet.
  3. Cook on both sides for 3 minutes, remove from heat and set aside to rest.
Potato Salsa
  1. Deseed the tomato by slicing in half and scoop out the insides and set aside in a small bowl.
  2. Chop the firm part of the tomatoes into small chunks and set aside in a separate bowl.
  3. Wash and chop the potato into small chunks like the tomatoes. Bring to boil in a small pan with salted water until soft but not mushy.
  4. Add the cooked potatoes to the chopped tomatoes. Mix in olive oil and season with basil, salt and pepper.
Tomato Mayonnaise
  1. Take the bowl of scooped tomato and stir in 1 tbsp of mayonnaise or more (depends on how you like mayo)
Grilled Corn
  1. Steam corn in boiling water until just soft, then remove from heat.
  2. Grease the corn with salted butter and place on a very hot skillet.
  3. Toss unto all sides to grill perfectly.
Plating
  1. Slice the steak into strips and set on a small bowl.
  2. Bring all your small bowls of meals together and serve on a platter and feast on.
Recipe Notes

To keep all meals warm whilst preparing and cooking; turn your oven on a low heat and place the platter inside. For every ready meal bowl, place unto the platter in the oven. Enjoy.
