Egg Penne Pasta – Eat, Live & Breath Italy


Yes, Penne is a type of Pasta and there’s probably no need to use both in the same sentence, but I just like the sound of Egg Penne Pasta. So it works for me.

One of my dreams in life is to eat, live & breathe the Italian way. As much rooted as I am to my Nigerian heritage I could not help but fall in love with Italian cuisine in my 20’something years of living life.

Egg Penne Pasta

Its my first time in Italy and the first meal I made was from this three ingredients I could find in the ‘Tabacchi’ (a corner store) on my walk to my new home.

I borrowed some seasonings from my flat-mate’s cupboard but she didn’t mind as she got to enjoy a home cooked meal.

Here’s the recipe:

Instructions
  1. In a pan, bring the Penne to boil in salted water with 1/2 a tablespoon of olive oil over medium heat.
  2. Drain the excess water from the pan and pour in the tomato sauce.
  3. Smash the garlic with the palm of your hand and throw into the pan.
  4. Add 1/4 tsp each of salt & pepper, stir and let it simmer for 3 minutes.
  5. Add the eggs by cracking each egg at a time into a bowl then pour into the pan (I do this to make sure I don't get any rotten eggs or shells in my food).
  6. Drizzle with the remaining olive oil and season with salt and pepper.
  7. Reduce the heat and let the eggs cook for 5 minutes, then sprinkle a handful of Parmesan cheese or more (there's never too much Parmesan).
  8. Place a lid over the pan to let the steam build up to cook the eggs for an extra 3 minutes.
  9. Turn the heat off and serve hot.
