Egg Sunny Side Up Tortilla
  1. Sprinkle some water on both sides of the tortilla wrap and place in a large pan over high heat for 1 minute on both sides.
  2. Remove the tortilla from pan and lay it on a plate. Place the salad on top and set aside.
  3. Reduce the heat on the pan to medium, pour in the olive oil and when hot break and pour the eggs into the pan one at a time
  4. Using a small spoon, slowly scoop some of the oil from the side of the pan unto the top of the eggs so it cooks evenly and until the whites are completely set but the yolks are not too hard.
  5. Using a spatula, take the eggs from the pan and place it on the plate of tortilla with the salad.
  6. Pour the left over olive oil in the pan over the tortilla and season with salt and pepper. Enjoy.
