Ingredients

For the mixed nuts butter
  1. Blitz the nuts with the coconut in a food processor (I used a Nutri-Bullet) to buttery consistency and store in a jar.
For the brownies
  1. Pre-heat oven to 180 degrees and grease a 9″ x 12″ rectangle baking dish with butter.
  2. Chop the chocolate and butter into a heat proof bowl and place in the microwave for 15 seconds intervals at high heat and stir until melted. Set aside.
  3. Mix the dry ingredients together in a separate bowl.
  4. Whisk the egg and mix it into the dry ingredients with the melted chocolate.
  5. Gradually whisk in the hot water and pour batter into the prepared dish.
  6. Place in the pre-heated oven and bake for 25 minutes or until a skewer inserted comes out clean.
  7. Set aside to cool.
For the icing
  1. Put the mixed nuts butter, icing sugar and mascarpone cream in a food processor/blender and blitz until creamy (You can also whisk it in a bowl)
  2. Pour this mixture over the brownies that should have cooled down and spread it over the top with a spatula.
  3. Slice the banana and place the slices over the icing.
  4. Grate the piece of chocolate on top to garnish.
  5. Freeze for two hours and using a bread knife, slice into the brownie to make square bars. serve cold.
Recipe Notes

You can make the mixed nut butter a few days or weeks ahead. Just store in a jar.
