Sweet Potato Gnocchi with Cabbage Stew


Here’s the recipe for my sweet potato gnocchi:

Ingredients:

  • 600g Sweet Potatoes
  • 400g British Red Potatoes
  • 2 Eggs
  • 2 cups Flour
  • 2 tbsp grated Parmesan
  • Pinch of Nutmeg (Optional)
  • Water
  • Salt to taste.

For the Cabbage Stew:

  • 2 Medium Tender-heart Cabbage
  • 280g Can of Sun-Dried Tomatoes in Sunflower Oil
  • 1 red bell pepper
  • 1 red onion (Sliced)
  • 1 Garlic glove (Finely chopped)
  • 2 parsnips (Diced)
  • 1 tbsp tomato puree
  • 2 stalks celery (Chopped)
  • Salt and Pepper to taste.
  • 1 cup water

Instructions:

  • Cover a tray with baking paper, sprinkle flour on top and set aside.
  • Cook both potatoes with the skin on, in boiling water for 25 minutes (try not to over boil it).
  • Remove potatoes from heat, immediately and carefully peel of the skin whilst its still hot, using a kitchen towel to protect your hands, then mash the potatoes.
  • Pour the flour on a clean and smooth surface, make a well in the middle and place the mashed potatoes in the well.
  • Add to the well the eggs, salt, nutmeg and grated parmesan.
  • Gently incorporate the ingredients without breaking the well until it forms a dough (do not over knead).
  • Cut the dough and mold into desired shapes and sizes, you can do this with your hand, a gnocchi board or a fork.
  • Place the gnocchi on the prepared tray, sprinkle with flour to prevent sticking and them set aside for about an hour to dry.
  • To cook, place the gnocchi into boiling salted water, you will know they are cooked when they float to the top.
  • Remove from the water and stir into desired sauce.

For the Cabbage Stew:

  • Remove the sun-dried tomatoes from the oil and set the oil aside.
  • Blend the tomatoes and bell pepper in a food processor.
  • Heat the sunflower oil you set aside from the tomatoes in a pan, toss in the onion, garlic, celery and parsnips, fry for 2 minutes.
  • Add the tomato mixture, stir and fry for 3 minutes, then add the tomato puree, cabbage and 1/2 cup of water, let it simmer for another 5 minutes.
  • Add the remaining water, then toss the gnocchi into the stew and serve hot.
