Ingredients
  

  • 10 Zucchini flowers (squash/courgette blossoms)
  • 1 litre frying oil

For the lentil filling

  • 200 g red split lentils
  • 400 ml water
  • 1 small onion finely chopped
  • 1 small red pepper finely chopped
  • 1 tbsp olive oil
  • ½ scotch bonnet pepper (or 1 chilli pepper)
  • 1 garlic glove
  • 2 tsp salt
  • ½ tsp paprika powder

For the lentil tempura

  • 50 g corn starch
  • ¼ tsp baking soda
  • 50 ml fizzy water

Instructions
 

  • Wash and soak the lentils in water overnight and drain the water.
  • Very gently wash the zucchini flowers and remove the yellow pistil and any dirt located inside (and outside) the flowers. Lay on a kitchen towel and set aside to dry
  • In a pan sauté the chopped onions and red bell pepper in olive oil.
  • Put the soaked lentils in a food processor with the chilli, garlic, paprika and salt. Then blend into a smooth paste.
  • Transfer the blended lentil mixture into the bowl and whip for 5 minutes or until doubled in size (using an electric mixer/whisk on high speed 4 or 5).
  • Scoop half of the whipped lentil mixture into a separate bowl and set aside.
  • Add the sautéed onion and pepper to the original bowl of whipped lentils and gently mix it in.
  • Scoop the mixture into a piping bag (a.k.a. pastry bag) and squeeze the lentil mixture into zucchini flowers, then close the flowers with a little twist at the top.
  • Prepare the tempura by adding cornstarch, baking soda and fizzy water to the other bowl of whipped lentils that you previously set aside.
  • Place a pan with oil over medium heat until hot.
  • Taking one flower at a time, roll it in the tempura batter and put it in the hot oil. You can fry 4 flowers at a time (don't overcrowd the pot). fry them well on all sides until slightly brown.
  • When they are nice and crispy, remove from the oil and place on an absorbent paper. Serve hot!
